Ingredients:
1 tablespoon cubed onion
1 cup cubed carrots
3/4 cup sweet potato
1/2 teaspoon fresh grated ginger
1/2 teaspoon fresh grated turmeric
(Or 1/4 teaspoon ground turmeric)
1/2 cup chicken broth
Pinch of garlic powder or 1/2 a garlic clove
1/2 teaspoon sweet curry powder
Pinch of salt and pepper
1/2 cup full fat coconut milk
How to Make:
- Put the onion, carrots, and sweet potato in the steamer basket with ginger and turmeric
- Pour water into the tank at level 3
- Start the cooking process
- When the vegetables are cooked, put them in the blending bowl and set aside the cooking liquid
- Add chicken broth, garlic, curry powder, salt and pepper, and coconut milk and blend to a puree
- If needed, blend adding some of the cooking liquid to bring to the desired consistency
